Kilo and my older daughter really love salmon so I am always looking for interesting yummy ways to prepare it. They also love pumpkin and it is really good for their digestion so we tried this super easy Crispy Salmon and Pumpkin Cakes Recipe.
My husband barbequed some salmon on the plank and I had left-overs. I also had some left over plain canned pumpkin from making soup so it seemed like a great time to combine the two and try out a new recipe for Crispy Salmon and Pumpkin Cakes or Sliders.
Ingredients for Crispy Salmon and Pumpkin Cakes or Sliders:
We did not use onion or dairy or gluten so Kilo and my daughter could both enjoy.
3/4 lb cooked fresh salmon or a 14 oz can – a great way to use it up my leftovers
1/4 red bell pepper, diced
a few diced baby tomatoes
2 Tbsp of cooked plain pumpkin (canned or freshh- I had a can open)
1 Tbsp Cocount butter (instead of butter)
1/2 cup gluten free bread crumbs
1 large egg, lightly beaten
1 Tbsp mayonaise
1 pinch of tumeric
1/4 cup minced fresh parsley and arugula
Olive Oil
Preparation
Put the tomatoes and red peppers and some of the parsley and arrugula in one bowl with half coconut butter.
Mix all the other ingredients except the bread crumbs in the bowl.
Add bread crumbs slowly to get texture so will hold shape and add more if too runny.
Cooking
Cook tomatoes and red peppers in a pan in the coconut oil lightly then add to the salmon mix.
Heat some olive oil in a pan and use an ice cream scoop to make cakes from the mix in the size desired- we did small sliders.
Fry cakes until lightly browned and crispy on bottom then flip and fry the other side until golden brown and crispy.
Drain them on paper towel then put on a plate and enjoy- great warm but Kilo loved them cool as well.

Oh boy, those dog cakes look yummy. We used to bake fish treats for training in order to have something with a strong enough smell to get attention.

I’m kind of curious about how my dogs would like this recipe. Strangely neither of my boys are all that crazy about fish, and believe me I’ve tried. All the other ingredients added in might be enough to convince at least my more food driven dog to try this recipe though! I’ll keep it in mind next time we have any leftover salmon.

Oh wow these look delicious enough for people! I know any dog who gets these will feel totally spoiled. I am hearing that tumeric is actually a really healthy thing to have in a dish. I need to check it out further.

I am a huge fan of treats that are good both for kids and our pets. Especially in homes where there are young children – this way, you don’t have to worry about if your child decides to chow down rather than feed them to the dogs lol My girl is IN LOVE with both salmon and pumpkin, and I love that this is free from her allergy triggers! I am definitely going to have to try making these for her.
